Reasonable labor cost for sink, pipes, disposal, and faucet?

Hi,

We live in Arizona (not sure if that matters) and we are remodeling our kitchen. We're having new countertops put in with a new undermount sink provided by the fabricator. The fabricator installs the sink basin of course and we are responsible for everything else. Given the age and poor condition of virtually everything under and above our current sink (photos below), we're tossing every single part and replacing it all.

My question, with our current situation, is what a reasonable price would be to pay for labor to install a new faucet, shut-off valves, drainage/pipes, and disposal. And how many hours would this take - assuming there aren't any major issues?

Bonus question: Should I put any thought into a garbage disposal as long as it has decent reviews and it's in the neighborhood of $100?

Hmmm... I am a Handyman, not a full licensed plumber {although I have done this a hundred times in the last 40 years.
I would probably charge, labor, in the neighborhood of $200 to replace the stops, risers, disposal, and drains.
An InSinkErator Bager V 1/2 hp costs near $100, and ISE is the only brand I will install. When you get the stops, (shut-offs") don't get ones made in China.
Don't "cheap out" on the sink "basket", drain/stopper. You'll regret it if you do.
Plastic drains are fine.
Also, the dishwasher drain hose should loop up to the counter top height, or use an air gap or you could be draining water back into the dw.
