Can someone please tell me if there is a different way to pipe this? Sometimes it drains fine and sometimes it’s suuuper slow. I did it myself so please go easy on me! First time homeowner looking to save some money ;)

Two choices.

Cut the wall open all the way to the vertical stack and lower the horizontal pipe coming out of the wall by cutting in the tee lower in the stack.

Or

Get a shallow single bowl sink without a disposal.

:eek::eek::eek::eek::eek::eek::eek::eek:

Your Stub out for the Waste is too high., you MUST., MUST cut the wall open., AND DO NOT use those flex corrugate drain pipes., its illegal., and debris will get trapped and clog it up.
