Double Supply lines?

Currently adding an island in the kitchen so have to move the kitchen sink supply/drain lines coming out of the slab about 3 feet so they'll be positioned under the new island. Hammer drilled out the concrete trench. Not sure what the purpose was for the two separate hot & cold supply lines both merging into one. What was the reason for this, to increase flow? I'll need to cut the pipe below the surface and add elbows to extend horizontally and then come up at the end of the trench as shown in the image. Want to make sure I understand the reason for the double feed merging into one before filling in the trench.

The supply lines to the sink come from the main supply branches, the tees go back under the slab to feed another fixture

OK that makes sense. I guess I'll just need to cut and reconnect as is, just lower under the surface, since that spot will now be the floor next to the new island going in. The way it was plumbed just made it look like 2 supply lined merging to one. Thanks for the response.
