Copper to Pex

I currently have copper pipes in my house and one of the walls where my laundry room is I need redo some of the pipes and want to use pex. The reason I want to use pex in that area is because the copper that is in their now has way too many 90 degree elbow and if I use pex I can get rid of most of them.

My question is going from 1/2" Copper to Pex should I use 1/2" or 3/4" Pex?

Thanks! Also is there any benefit of using brass fittings over plastic?

I always use plastic except for connection to copper and any threaded connections.

Plastic just because it's cheaper or is it better to use plastic?
