Hello,
I have a 1981 house in New York. We just moved in a couple of months ago and we noticed when we turn off the hot water, the hot water pipe coming from our water heater shakes and bangs off the joists. The previous home owner tried jamming styrofoam between the joists and copper plumbing to minimize the sound... I'm guessing this is wrong like 99% of there fixes.

Is there a simple way to fix this? Can you use a clamp to securely fasten the copper pipe to the joists so it doesn't rattle or will this cause the pipe to burst?

Its only in that one area and only that one pipe... but it is most annoying when we are running laundry as to multiple bursts of hot water causes the pipes to bang over and over loud enough to hear it throughout the whole house.

Yes, the hot water pipe from the water heater is the one that shakes. One question though, the link you sent me, the hammer arrestor has threaded ends. Does it screw into the hot water input hose of the washing machine? If so, how does it help stop the banging form the facets and dishwasher.. etc?

That arrestor goes between the the clothes washer faucets and the washer hose. The reason a gave you the link for that one is because they are the easiest to install. They will work at that location. Put one on both the hot and the cold.
