Hello and thanks for any feedback. I notice that most fixtures have 8" separation between hot and cold instead of the 10" I got, and escutcheon cover plates are too small for this as well, if I want to go with a single spout with hot/cold built in. Please see photos. I'd like to replace this with a new fixture. Can anyone suggest how to go about this? Any products I can purchase so when the plumber comes he have the right parts to do the job? Thanks again.

They make faucet hole covers that you can put over the outside holes and use the center hole for a faucet.

Get a disposal air switch for one hole, a dish soap dispenser for the second hole, and the third hole on the far right perhaps an RO or hot water faucet, or a second dispenser for hand soap.
I have a soap dispenser, a R/O unit faucet and my one hole sink faucet. Sleek and smooth.
As other's have pointed out there are several options for utilizing the extra holes if you put a single handle faucet in the center hole. I would find your current dual handle setup in a kitchen sink to be very inconvenient.
We just drink the tap water. That which does not kill us makes us stronger.
