Kitchen Sink Hot / Cold are 10" apart - How to replace?

Hello and thanks for any feedback. I notice that most fixtures have 8" separation between hot and cold instead of the 10" I got, and escutcheon cover plates are too small for this as well, if I want to go with a single spout with hot/cold built in. Please see photos. I'd like to replace this with a new fixture. Can anyone suggest how to go about this? Any products I can purchase so when the plumber comes he have the right parts to do the job? Thanks again.

As other's have pointed out there are several options for utilizing the extra holes if you put a single handle faucet in the center hole. I would find your current dual handle setup in a kitchen sink to be very inconvenient.
