Hot water fluctuates with pressure

Thanks for taking the time and putting up with a novice. My fiance has a pressure pump as she is on municipal water but the pressure is very low. It consists of a pump and pressure tank. When we met it was not working properly (when turned on would go on/off and cycle every 2-3 seconds)and she did not know where to go to get it looked at. I had a well company come out as it looked similar to my well system just without a hole in the ground. They came out and diagnosed to low pressure in the pressure tank and readjusted the pressure switch limits. Been working great for the last few days.

Strange side effect. The temperature in the shower reaches temp well and has the right amount of pressure but the water temp goes from comfortable to scalding at least one time during a 5 minute shower and lasts a minute or so.

I have not even looked at the problem yet but hope someone could point me in a few directions to look at. Seems odd as the pump is on the main inlet to the house and I would think would increase pressure across both hot and cold even if there were a difference in the pressure when the pump tuned on.

Not sure. I will certainly check. The fluctuation was never a problem before the pump was reactivated. Its been of sitting there unused for years. Could this still point to a problem with the cartridge? Maybe it was fine before, when there was poor pressure, but now that the pressure is back it acts up?
