Once you install a 30amp breaker and run the wire is the connection just your typical direct wire cap and sheath or is there anything that goes between?

You seem to be on the right track except for the "white" wire, but because of concerns of missing something and causing injuries, I would highly recommend having a licensed electrician double check your plans before proceeding.
 
Thanks, I just been looking at instant demand/tankless and since I only have one bathroom and extremely light use in my house I am probably going with one of these.

If they are 120v one can generally skip putting in the new breaker if the load is light correct?
 
Yes, but unless you have access for natural gas, I believe it will be necessary for 240v.
