Bosch 7 gal electric HWH instal questions

I’ve had a major gas leak issue with a quote of $6000 to repair.I plan on selling my home in the very near future and the only gas appliance I had was the HWH so I’ve opted to install a couple point of use heaters. I purchased a Bosch 7 gal T3000 120 v hard wire HWH. It’s going in my kitchen where a dishwasher used to be. My home was built in the early ‘80’s with original plumbing intact. Can someone please help me tie the Bosch into my water line. Keep in mind there was a dishwasher coming off the line and now I only have access to cold water since I’ve disconnected the gas HWH. This is what I’m working with under my kitchen sink.

I'm not a plumber so take this for what it's worth.
Was the gas WH a tank unit? If so why not just replace it with an electric one? Putting a bunch of small units around the house seems like a lot of work.
I'm not sure 7 gallons will be big enough for a shower so do you have a bigger one in mind?
 
you only get 70% hot water before cold mixes in, so no way 7gal. will provide hardly any hot water...worthless plan.

I just want enough at my kitchen to wash a few dishes and wash my hands . It nothing I plan to be permanent or long term, but thank you for your input. I would appreciate some help in knowing how to hook it up under my sink.

I would need to run a 220 into my attic and I’m not in the position to do that at this time. I inly plan on at the most 2 small tanks . Just for dishes and cooking in the kitchen and maybe one in the bathroom for a bath. Right now I’m heating up 5 gal buckets of water and that’s just a pain in the butt for this old gal. I’ll be moving soon so I don’t want to invest a lot of money that I don’t have .
 
Cold water in and hot water out. Then run the 3/4” relief line to the outside or a safe discharge location.

You may also need an expansion tank.

I would replace the gas water heater with an electric, you can get 20 gallon heaters that operate on 120 volts, so the electrical would be simple, and the water lines should be easy to hook up in the present location. Our winter home in Arizona is a park model mobile home with a 20 gallon 120 volt water heater, and it provides all the hot water that the 2 of us need for showering and dishes, with a dishwasher.
