I am planning on installing a water supply line from the street to my new home about 500' away. what size pipe should I use and is PVC the proper material.

With that length of run, I wouldn't go less than 1 1/4" pipe. PVC is the standard material for water mains around here. If you need to use any male or female threaded adaptors, I would use Schedule 80 for those.
