Does it matter what type of material (plastic, copper plated, vinyl etc.) is used when securing copper pipe for the hot side?
 
Yes it makes a difference. Using Dissimilar metals will cause the less noble to corrode. So using a galvanized pipe strap on copper, first the zinc in the galvanizing corrodes and then the steel follows as carbon steel is less noble then copper. In a salt air environment (within a few miles of oceans) its far worst.

Using plastic coated supports will work for most ares. Plastic or fiberglass supports would work fine too. Best is using the same metals.

Note that most so called copper pipe hangers are just painted steel and really don't last much longer then bare steel hangers.

I've seen some contractors wrap the copper pipe with electrical tape, which is sort of ok... I've passed it on some some inspections if its done well..
