When a coupling with internal stops is sweat soldered does the solder flow all the way to the stops? If the answer is No then I assume that a coupling that doesn't have internal stops would work the same way. If the answer is Yes then what stops the solder flow in a coupling that doesn't have internal stops?

solder flows to the heat by capillary action.

if, you are trying to solder one side of a coupling, and do not want solder to run to the other side
it is all in the position of the fitting and the heat placement

1, do not use so much solder, an experienced hand can do this task easy
2, position the coupling so the unsoldered portion is point up
3. paint the inside of the coupling with pipe dope, where you do not want solder.
then after it cools, clean the burnt dope out of the fitting

a coupling with out stops is called a slip coupling
a coupling with stops , the stops are called dimples
the solder will flow over the dimple like it was not there

If you are using a slip coupling to join pipes in a horizontal run do you apply solder to both ends of the coupling?
If you are using a slip coupling to join pipes in a vertical run what's the correct procedure?

do you know how to solder ? or are you just going to throw heat at it till ....till what ?

establish heat to the whole fitting first
then
heat in the back of the fitting, solder at the other end on opposite side
when solder starts to run remove heat

if you want to learn to solder, get a hand full of fittings and practice
