The caulking/(adhesive?) that was used when the sink was first installed has dried and the seal between the sink and the 1” granite top has loosened to the point where the sink is drooping enough on one side such that water can seep through and into the space below.

I’m looking for advice as to what type of specialty caulking/adhesive I can use to re-secure and re-seal the sink to the granite.

I just re-caulked my bathroom sinks last week and used the DAP Kwik Seal 5.5 oz. Kitchen and Bath adhesive caulk. Being a small tube, you can easily conform it to your sink.

I think that sinks are fastened to granite or other solid surface tops with silicone caulk. That would not dry out as yours did. I think you should use a scraper to unfasten the rest of the sink, (after disconnecting the drain). Then clean both edges, then apply silicone caulk, then clamp or prop the sink in place until it cures.

My Cambria counter (quartz) installers used silicone, FWIW.

Its nice when the counter top guys drill and epoxy mounting inserts in. But there are undermount clips to some sinks., in which there is a u channel or mounting bracket on the sink that is able to use undermount clips. Which pushes up against the granite and pulls down the sink. If you have no undermount brackets on the sink.,

Use undermount silicone Adhesive
Give it time to properly cure.
