Any suggestions on how to remove the supply lines and reinstall on a new vanity and sink?

you will have to find the hot and cold pipes the feed the sink/bathroom shut them off cut the 1/2" copper coming out of the wall leaving enough room for 1/2 by 3/8 sweat by compression valves

How do I attach the compression valves after cutting the pipe?
 
The new shutoff valves just grab the copper pipes with a squeeze type fitting.
You only need two wrenches to tighten them.
It takes only a few minutes.
 
If you are reusing the faucet you'll need a couple of short lengths or 3/8" copper and 2, either 3/8" compression (or Sharkbite) unions/couplers. Get two 5/8" X 3/8" angle compression stops. (After looking on Youtube as Jeff says.
Also, don't forget a small tubing cutter when you pick up the parts!
