Is there a generally accepted standard for which side of a double bowl high/low sink to attach the disposer? the old sink had equal depth bowls, but the new one has a deep bowl and one more shallow. I'm inclined to put the disposer on the shallow one but would consider the deeper one if there was a compelling reason to.

Shallow sink is the preferred sink for disposal. I just did one last week and the customer wanted the disposal on the left , which put it in the deeper sink.
Best to check how much room you need to make a good drain.
All depends on your preference. some scrape/rinse/wash from left to right where others like to do it from right to left

Preferred method of drain installation would be to have the waste ell provided with the disposal to dump down into the top of a santee. The 2nd compartment to connect to santee with a horizontal line. this will allow the discharge of the disposal to go directly down into the p-trap.

Another thing to keep in mind is the air gap from dishwasher , if you're required to have one.
