pex clamps

I am replacing a 1/2" copper line with pex in a wall,is it ok to use s/s cinch clamps on the fitting instead of copper crimp rings ? Also why do hot water tank mfgs. use galv. nipples instead of brass nipples on their tanks,and is it a good idea to switch the galv.nipples to brass before you install the tank.

The galvanized nipples are very likely plastic lined with little check balls in them.
