Gas Water Heater - too hot, then too cold and back

Gas water heater about 10 years old. Taking warm shower, the water turns real hot suddenly (scalding hot). Turn faucet down and wait (standing back!) - in 30 seconds or so the water gets cooler, so I adjust it back to warm. Same thing happens in a few minutes. The hot water in my sinks gets hotter than usual, but it's not the problem the shower is because one can turn to colder water quicker.
 
not sure if it's the exact one,but appears to be similar to Delta T13022 - the one with the plastic ball handle.
 
Sounds like you need a shower cartridge replaced.You are likely over thinking the water being too hot at your kitchen tap due to the fact you know there is a problem with the shower. If that is not the case the dip tube (tube that directs the cold water to the bottom of the hot water tank) may be broken.
