My ancient gas tank water heater finally conked out, and I've started looking online to see what's available. I keep turning up models that require an electrical connection for various kinds of improvements such as fans, induced draft, etc. The water heater closet in the middle of my living space has no electrical supply. Am I going to have a hard time finding a heater that doesn't require electricity?

You shouldn't have trouble. There seems to be plenty at HD and Lowes, although some have raised quality issues regarding units from those places. Try calling a local plumbing supply that does retail business (some don't) and hear what they have to say.
FWIW
YMMV
