I am installing some pex tubing using copper crimp rings. Everything passes the go/nogo gauge supplied with the crimp tool. I notice that I can rotate the fittings after crimping, and also that the end of the tube against the fitting is slightly flared out. Is this normal?

I read around, but could not see anyone talk about these items specifically. Thanks!

When I first started doing pex I would use the clamp method. When I would do it the fitting would be able to rotate when it was clamped. You're most likely ok but the only way to really tell is to put some pressure on it.

Your good you can spin the fitting after the crimp is done.
