The installer of my 75 gallon heater was not in any way shape or form a plumber. He never heard of installing a dielectric and instead of, he just installed a 3/4" female copper adapter straight to the steel tank. My question is does anybody remember which of these two metals will deteriorate first?

The steel would be sacrificed.

Note though, most nipples that ship with water heaters use dielectric nipples, often with heat trap. You might not be able to spot them from the outside, but, they have plastic liners that isolate the steel.

that leak between the liner and the very thin steel……that rusts out
