Trying to renovate our small laundry room, what are these pipes for?

So I'm gearing up and planning to reno our tiny laundry room. There are pipes everywhere since our gas furnace is in the same room. I'm very handy, can solder and have repaired some copper pipes before.

My 2 questions... 1st (marked in the image) what are the set of pipes in the middle? Do I need these here still? I want to clean all this up, 2nd can anyone recommend some suggestions for a cleaner, more simpler setup here?

Those 2 lines are probably for a water softener that was removed.
I would open the wall where the 2 main lines come out.
Box out the inside of wall.
add a 90 pointing down with a ball valve on each line.

Are you keeping that sink and faucet. That is a real beauty.
I Don't think I ever seen anything like that.

get rid of that clamp on saddle valve.

Pop out of the wall low and run them around the corner under the sink. add a tee on each line for angle stops for a new faucet that gets fed from below.
You can use a dual stop on cold to feed that ice make line /Or what ever that is. then continue on to the auto washer.
 
my opinion.

pull the sink out away from the wall. build a wall where the piping is to clean it up.

replumb the piping inside the new wall..

for the incoming water valve..frame out a box with the valve inside..

and a hinged door to cover the valve.

cut into old wall...add a proper washer drain BEHIND the washer..
