Intermittent hot water?

My boiler is an old oil-fired unit. When I need hot water, for example dishes or for a shower, and I turn on the hot water, it takes about 30 seconds to get hot. After about 2 minutes the water begins to run cold for about three minutes and then becomes hot again, to full temperature very quickly from cold- about 10 seconds from minimum temperature to max. It then stays hot for as long as I need the hot water. The boiler heats the house and supplies the hot water- I believe it is a closed heating system so I don’t think the heater water impacts the house water. Any ideas? pSI seems to be ok but I’m not totally sure- I’m not used to reading this kind of gauge- seems to have two sets of readings on the top and the bottom. any ideas why the water goes back and forth? I notice this when no other fixtures are active- no washing machine, no dishwasher, no other showers or even sinks or toilets running.
 
When was the last time it had a seasonal service, sounds possibly like your mixing valve is acting up can you show a pic of your hot water side of your boiler (your tankless coil) connected to your boiler????
