Can I run a pex water line inside my house but outside of an interior wall?

As the question states, is there a code, based on the IPC - 2018, that requires water pipes, either 3/4 or 1/2 inch to be buried in a wall or in the ceiling? Why can't it run along the ceiling exposed to all to see?

Protect from UV light and you can run it exposed. So you can paint it, follow the manufacturers recommendation for paint.
