I have a refrigerator water line that has to run about 35+ feet. Due to this i have 2-25ft lines run with compression couplers in the middle to get the length needed.

I have great water pressure throughout my house but it seems like the couplers i have in there are causing lower water pressure.

I am replacing my fridge and figured I'd rerun the line while i am at it, but unfortunately the longest i can find is 25'. Is there a reason for this? Or is it just uncommon for anything longer than 25' so manufacturers just don't bother?

Length can reduce flow. Try using 3/8 copper tube. Also see what the water flow looks like when it is disconnected from the Refrigerator. check for kinks in the line

And yes, longer lengths up to 60' are commonly available from plumbing supply stores.
