Pex or Copper for a 1928 home in San Francisco

Hi All, I am remodeling a 1928 home in San Francisco. The GC asked if I would prefer Pex or Copper when we redo the plumbing. I don't really know. What do you guys recommend?
 
Depends on the quality of the water you’re putting through it.

With good water and cost not being a factor I would chose copper without a doubt. I’d have the joints soldered, no pressed fittings.
 
We only press copper now, and also own the expansion pex system tools.
We've been using Uponor Pex happily and would use on my own home without hesitation.
If your budget can manage, nobody ever regrets copper here in the SF Bay Area, since our water is incredibly high quality and well monitored.
Copper prices have now become truly crazy in frame of reference before the pandemic.
 
Not throw a wrench it this thread, I used pex in my house for a full basement repipe, copper pipe froze because previous owner didn't know what they were doing would have cost a fortune to repipe in copper, I used the copper crimp ring method and brass fittings my crimp tools came from a co called mil3 I researched the tools and they had been around for a long time and they repair their tools about 80 bucks each
For each size it was pretty easy you have to support it at every joist , at least I did.
I just put a laundry on the 1st fl and used it again, this time I used plastic fittings on the advice of another plumber who installed lots of pex he uses brass fitting on heating systems that's my 2 cents
